I know the one on State is open 24 hours, which makes it terribly convenient for me. It was never very busy when we went there. So we speculated that it was just a front for drug running and that, in fact, "Los Beto's" translates directly into "The Drugs" in English. Their breakfast burritos are addictive enough to make one wonder... Actually, I’ve never been to the original Fairview location.
